You ever think about how everyone’s obsessed with protein? No joke, I was meal prepping my vegan lunches the other day, and even my grocery list was like, ‘Cue the protein powder,’ which I seriously wasn’t into. No thanks, I’ll pass on the chalky aftermath.

My kitchen looked like a veggie apocalypse, with kale strewn everywhere and chickpeas rolling under the fridge. Meanwhile, you’ve got to wonder how these clean-living Instagram influencers make it look so easy. (I think the kale was judging me, honestly.) Did you know it’s possible to hit that magic protein number without those weird chalky powders? Quinoa, lentils, tofu, and let’s not forget the mighty black beans. Peas too, those little green guys that nobody gives enough credit to.

I grabbed every legume I could find and just went berserk. I mean, doesn’t everyone love a bit of daal with everything? Maybe not according to my taste buds, but hey, this is my ‘high-protein vegan revolution.’ So, I baked sweet potato, roasted cauliflower, and yeah, okay, I might have made far too much hummus (can’t help it, I’m obsessed). And if you haven’t tried this combo—sweet potato and black bean enchiladas—you’re missing out. Seriously, how come no one else has told me this sooner?

Of course, let’s not forget the price of avocado these days. You start off thinking, ‘I’ll just add a couple slices,’ and suddenly you’re robbing a bank to afford your habit. But you know what? I think I’ve cracked this vegan meal prep thing without splurging on those expensive powders. My fridge might be out of control, containers piled high with brightly colored meals, but at least I’m not living solely on kale chips or some depressing quinoa mess. Those influencer blogs you stumble across (like this healthy food one) make it sound like you need a Master’s degree in nutrition to get it right, but really you just need a pile of beans and a sprinkle of no-nonsense.

So, yeah, high-protein vegan meal prep without the supplements is possible, it just involves accepting veggies as your new overlords. My eyes are still recovering from all that chopping. Ugh.
