I recently tried tackling a 3500 calorie day because, well, my curiosity and stomach just couldn’t resist. Yeah, it sounds like a lot, and it was. My starting line was the kitchen counter at 7 a.m. with a massive stack of pancakes, slippery under a rain of syrup and little berry satellites. They were deceptively weighty. (Like, who knew tiny fruits could stick to your teeth like sugar-coated glue?) But hey, at least my morning was sweet.

By lunchtime, I was feeling like a walking circus. I rolled into the kitchen, eyes on my sautéed chicken and generous pile of colorful veggies. This salad was more a mini-meadow than anything. Leaves and oranges and nuts, oh my. Seriously, I was rummaging through what felt like a farmer’s produce crate mixed with a squirrel’s pantry. Apparently, wonderful as it looked, it harbored more calories than I’d ever given credit. Classic salad deception.

The afternoon tried to trick me with homemade smoothies. I thought I’d discovered the secret to never drinking my calories again. Ha! Little did I know those bananas and spoonfuls of peanut butter would sneakily mock my earlier assumptions. And then there was dinner. Not so much a meal, more of a contender in food wrestling. A large plate of spaghetti slept under an avalanche of meatballs and parmesan. The mental notes I took will haunt me till I’m 80. (Or till the fridge empties… whichever comes first.)
So, here’s the thing. Eating 3500 calories in a day is not for the faint-hearted. Or the faint-stomached. Unless you’re some kind of calorie-counting wizardry, it’s a dance running between slightly stuffed and overstuffed. Between delight and dread. My eyes still hurt from seeing so much food. I think my belly and I need a truce. Easing off would be wise. Right now, even thinking about a fork feels risky. Ugh.
Just when I thought I had it all figured out, I stumbled across a rather questionable list of healthy food ideas. Either the universe is mocking me or it’s just teasing my overestimated dietary dreams.
